Risotto alle ortiche e fiori di malva / Risotto with Nettles and mauve flowers

Oggi ho cucinato un risotto gustoso e sano, che evoca luoghi incantevoli... la campagna, i prati e i boschi...
Un piatto che ricorda la cucina delle nonne, bravissime ad usare erbe e fiori, per preparare pietanze povere ma molto buone e sostanziose.
Io l'ho preparato in questo modo...

Ingredienti (per 4 persone):
1 confezione di Risotto all'Ortica Cerreto Bio
30-40 gr di burro bio da panna centrifugata
1 cucchiaio di olio evo bio
1 scalogno bio
1 dado vegetale bio
50 gr di grana o parmigiano grattugiato
fiori di malva bio essiccati 
Lavorazione:
Innanzitutto, preparare un brodo vegetale con circa 1 litro di acqua e il dado vegetale biologico.
Tritare lo scalogno e farlo rosolare in olio evo, in un tegame; versarvi il riso crudo e tostarlo.
Versare nel tegame il brodo caldo, iniziando con un mestolo e successivamente, aggiungendone ancora, fino a completa cottura del riso (circa 1/4 d'ora).
Infine, spegnere il fuoco e mantecare il risotto con il burro e unirvi la malva.
Servire caldissimo spolverizzando con il formaggio grattugiato.
Suggerimento: Servire il piatto con lo splendido Chardonnay DOC Piave Dogarina di Campodipietra, con sentori che lasciano percepire note di frutta matura.

Ingredients (serves 4): 
1 package of Cerreto Organic Nettle Risotto 
30-40 grams of butter cream Organic centrifuged 
1 tablespoon extra virgin olive oil organic 
1 organic shallot 
1 organic vegetable stock cube 
50 grams of grated parmesan or grana 
Organic dried mallow flowers 
Processing: 
First, prepare a vegetable broth with about 1 liter of water and the nut organic vegetable. 
Mince the shallot and sauté in olive oil in a pan; pour the uncooked rice and toast. 
Pour the hot broth to the pan, starting with a ladle and then adding more, until the rice is cooked (about 1/4 hour). 
Finally, turn off the heat and stir in the rice with the butter and add the mallow. 
Serve hot with a sprinkling of grated cheese.
Tip: Serve with the wonderful Chardonnay DOC Piave Dogarina Campodipietra, with hints that let you feel ripe fruit.
